Oatmeal Cake

Cake:
     3 cups Water
     2 cups Oatmeal
     2 cups Brown Sugar
     2 cups Sugar
     1 cup Butter
     4 Eggs
     3 cups Flour
     2 teaspoons Baking Soda
     2 teaspoons Cinnamon
     1 teaspoon Salt
Brown Sugar Frosting:
     2/3 cup Butter
     1 1/2 cups Brown Sugar
     1/2 teaspoon Salt
     3 Tablespoons Evaporated Milk
     1/2 Tablespoon Vanilla
     1 1/2 cups Coconut
     1 1/2 cups chopped Walnuts

In a saucepan, bring water to a boil.

Stir in oatmeal.

Cool until only slightly warm.

In a large mixing bowl, beat brown sugar, sugar and butter until light and fluffy.

Add oatmeal mixture.

Add eggs one at a time, beating well after each addition.

In a seperate bowl, thoroughly combine flour, baking soda, cinnamon and salt.

Add to sugar/oatmeal mixture.

Pour batter into a greased and floured jelly roll pan.

Bake at 350 for 50 minutes, or until toothpick inserted in center comes out clean.

Remove cake from oven and top immediately with Brown Sugar Frosting.

Brown Sugar Frosting
In a saucepan, combine butter, brown sugar, salt and evaporated milk. Bring to a boil, stirring constantly. Boil and stir for 1 minute.

Remove from heat.

Stir in vanilla, coconut and nuts.

Spread immediately on hot cake.
